Gina has always had an interest in baking. She bakes her cakes from scratch, “Because it gives me more opportunity to be creative and it usually tastes better 🙂.”

Gina attended a cake decorating class at New York Bake but is basically self taught. She used to sell her cakes to stores in her neighborhood in the Bronx. She also recruited testers to sample the different cakes, only requiring that they be fully honest about their tasting experiences.

Gina has three daughters who love baked goods , and this inspired Gina to sharpen her baking skills. She had lots of fun baking together with her daughters as they grew up. They would invite a friend or two, and Gina decided to start a once-a -year baking group called Cookie Time.

Cookie Time

Girls five years of age and up would be invited to come to the house to bake cakes, make lollipops and participate in a girls group. Each girl would go home with a goodie box of what they made. Gina hosted Cookie Time for about 30 years.

Gina’s cake preparation

Preparation depends on the type of cake. Usually, it takes a few hours to make, but some cakes will take two days to prepare. 

Gina’s cakes are usually eight or nine inches high, and she mostly makes them with two layers, but her range also includes single layer Quattro lèche birthday cake, and simple unfrosted Bundt cake for home and simple occasions.

Fillings

Fillings can be fruit, icing or buttercream frosting.
